Cottage Cheese Combinations Can Make Your Meal
Cottage cheese has long been a favorite and wholesome addition to meals, either as a side dish or even as a semi-salad-dessert combination. It is one of my personal favorites and through the years I have concoced some combinations that I really enjoy. I hope you do too!
For a nutritious and tasty lunch or supper, here is a simple salad that just can’t be beat. Use one pint of Cottage cheese (small curd is probably the best), chop up one peeled tomato, one avacado,and one small green onion. Stir into the cottage cheese and add salt and pepper to taste. This salad is absoutely awesome and totally good for you! Indeed it can be your entire meal, for it is very filling. For a larger group just use two avacodos and tomatoes and a quart of the cottage cheese.Enjoy….
Another tasty combination is made up of an unusual combination of fruits. Peel and chop up a pear, some strawberries, and a banana. Stir together with cottage cheese and serve with two or three slices of sharp cheddar cheese. Yummy!
This salad is a great treat for kids and adults alike and is enough for a family gathering. You will need a quart of cottage cheese, to which you need to add one can of drained cicktail fruit and one half bag of tiny marshmallows. Select any flavor of jello (strawberry or lime work well) and simply stir the dry jello powder into the cottage cheese. You may if you wish substitute a can of crained pineapple chunks for the fruit cocktail. Ading one cup of chopped walnuts to this concociton is also a nice addition.
I call this the “kitchen sink” salad, because it has everything in it but the kitchen sink! Use one red pepper and one green pepper and chop them up fine. Add a couple chopped medium sized green onions and at least one peeled tomato. A nice addition also is one medium cucmber. If you add in a radish or two this adds some great color. Chop your veggies first, stir them all into a half a bag of store bought salad mix, and then add the cottage cheese at the last minute and serve fresh. Season with a teaspoon of honey and a squirt of lime.

How to Make an Easy Vegetarian Meal your Family will Love
Stuffed Tortillas
Here is a terrific family meal that includes all the food groups and is fun and satisfying.
You will need:
tortilla skins
shredded iceberg lettuce
chopped tomatoes
sliced black olives
chopped green onions
salsa
sour cream (you can substitute with nonfat plain yogurt if you want to be weight conscious)
2 cans of brown beans in tomato sauce
chili powder
cumin
vegetable oil
shredded cheddar cheese
1. Fry the brown beans in a nonstick pan lightly drizzled in vegetable oil.
2. Add about a teaspoon of chili powder and of cumin. Feel free to use more if you want a spicier taste.
3. Stir and fold beans until they’ve got a pasty consistency.
4. Soften the tortilla skins in the microwave for about 40 seconds.
5. Put some of the beans in the tortilla skins and roll them up.
6. Put two or three rolled and stuffed skins on a plate (depending on the family member’s appetite).
7. Put shredded cheddar cheese on top and microwave until cheese has melted. Don’t overheat.
8. Pile the lettuce on top. Then add the other vegetables on top of the lettuce.
9. Add some salsa and sour cream on the side.
This recipe can be prepared with the help of the children, allowing them to feel they are contributing to the preparation of the meal. They’ll enjoy being able to pick and choose which ingredients they include with their meal.
Easy Summer Meal
1. Prepare or purchase tabouleh (a combination of bulgur or couscous, chopped parsley, mint, tomatoes, cucumbers, green onions, oil and spices).
